VLCD Day2 Lunch: Shrimp and Lettuce (mustard dressing not included in picture)

Happy Friday!  I just love Friday, don’t you??? Friday is the precipice before the weekend, and I just love teetering on the edge of Friday, which finally relents itself, and then the lovely free-fall into the weekend.  What’s not to love about that?

I’ve been pretty hungry these first two days of VLCD.  I’m just ignoring it and drinking my usual crapload of water and tea.  I shopped at Costco last night and was really hoping to see Honeycrisp apples there, and when I saw them, I practically jumped for joy.  They are my hands down favorite apples, so delicious.  Run out and get some while you can – they are seasonal so we’ll see them for a few months and then they’ll be gone until next year.

My food:  1/2 apple mid-morning and mid-afternoon.  Repeated my VLCD Day 1 lunch – Shrimp, lettuce, and mustard dressing (but it was a HAPPY shrimp salad!).  For dinner I had chicken and spinach and I completely forgot to take a picture before I scarfed it.
