
VLCD Day 39: Dinner (Shrimp and Cabbage with Green Curry Powder - YUM!)

If you can believe it – I’m STILL having back pain. I get better, then I get worse again. Thankfully I don’t get as bad as I was last week, it’s more a nagging pain now instead of an excruciating one. My chiropractor loves me.
My meals: 1/2 an apple mid-morning. Sashimi and daikon radish for lunch – you’ve heard me say it before , I want sashimi all the time. Nothing for mid-afternoon snack. For dinner I actually whipped up a new concoction. It’s shocking that I didn’t resort to my standard Zip-n-Steam bag for dinner! I sautéed 2 cups of chopped cabbage in a skillet with a bit of water, some green curry power, garlic powder, a little anise, and a dash of Braggs. Once the cabbage was almost done I threw in 100 grams of chopped shrimp and stirred it around a couple of minutes until the shrimp were pink and done. It was *very* good. I’d have this again. Any kind of curry powder would do in this recipe, and it could even just be left out. Substitute chicken for the shrimp if your heart desires
I really wanted shrimp for dinner, despite the fact that I don’t seem to lose well on it. And that proved itself true once again with a .2 loss.
One thing I have neglected to mention previously is that I have been able to find some fabulous spices at World Market. They have an incredible gourmet food section. When I’m looking for new spices to try I make sure that the the ingredients contain no sugar or carbs or anything that’s simply weird or questionable or freakishly hard to pronounce (like: Sodium Aluminum Phosphate, Monocalcium Phosphate, or Dextrose, etc, etc etc). Read labels! Ingredients like “fenugreek” or don’t bother me so much, I at least recognize it and know that’s a natural herb. Even if it is a weird herb
World Market is where I found the green curry powder – and I looved it, which is no surprise because I love Thai green curry. Especially when it’s got the fat laden-coconut milk in it. Soooo cussin’ good. P3, baby – that’s when I’ll be making a low carb version of Thai green curry.
